SWEET AND SOUR RED CABBAGE 
1 med. size red cabbage, sliced very thin
1/2 lg. Spanish onion, peeled and sliced thin
4 apples, peeled, cored, and sliced thin
1/4 c. firmly packed dark brown sugar
3 tbsp. butter
1/4 c. red wine vinegar
1/2 tsp. caraway seeds
1/8 tsp. salt
1/2 tsp. pepper
1/8 tsp. nutmeg
2/3 c. boiling water

Place all ingredients in a large pot; toss to mix. Cover and boil slowly, stirring once or twice, 20 to 25 minutes until cabbage is just tender. Makes 4 to 6 servings.
