HAM AND GRATED SWISS CHEESE
QUICHE
 
1/2 c. mayonnaise
1/2 c. milk
2 eggs, beaten
1 tbsp. cornstarch
6 oz. ham, cut into 1/2" pieces
8 oz. Swiss cheese, grated
1/4 - 1/3 c. spring onion, chopped
2 oz. green pepper, finely chopped
1/8 tsp. white pepper
1 unbaked 10" pie shell

Blend mayonnaise, milk, eggs and cornstarch until smooth. Add ham, cheese, onion and peppers. Mix to distribute ingredients evenly. Pour into unbaked pie shell. Place on a cookie sheet and bake at 400 degrees for 10 to 15 minutes until filling has begun to set. Reduce oven to 350 degrees and continue baking for another 25 minutes. Serves 6.

VARIATIONS:

1. Instead of ham, use 1/2 package frozen chopped spinach, well drained and omit the onion and green pepper.

2. Or 12 slices bacon, fried and crumbled plus 1/8 teaspoon nutmeg and omit the onion and green pepper.

3. Or 1/2 pound mushrooms, sliced and cooked in 1/4 cup butter plus 2 green onions, sliced and omit the green pepper.
