SNOWY APRICOT BARS 
1 pkg. (6 oz.) dried apricots (1 1/3 c.)
1/2 c. firm butter
1/2 c. granulated sugar
2 1/2 c. Bisquick baking mix
2 c. packed brown sugar
4 eggs, beaten
2/3 c. Bisquick baking mix
1 tsp. vanilla
1 c. chopped nuts
Powdered sugar

Place apricots in 2 quart saucepan; add enough water to cover. Simmer uncovered 10 minutes; drain. Cool; chop and reserve. Heat oven to 350 degrees. Cut butter into granulated sugar and 2 1/2 cups baking mix until crumbly. Pat in ungreased jelly roll pan, 15 1/2 x 10 1/2 x 1 inch. Bake 10 minutes. Beat brown sugar and eggs. Stir in apricots, 2/3 cup baking mix, the vanilla and nuts. Spread over baked layer. Bake 30 minutes longer; cool completely. Cut into bars about 2 inch x 1 inch. Roll in powdered sugar. 75 cookies.
