COCONUT - CHERRY BARS 
1/2 c. packed brown sugar
1/4 c. butter, softened
1 1/2 c. Bisquick baking mix
2 eggs
1/2 c. granulated sugar
1/4 tsp. almond extract
1 c. flaked coconut
1/2 c. chopped almonds
3 tbsp. Bisquick baking mix
1/2 c. Maraschino cherry halves

Heat oven to 350 degrees. Mix brown sugar and butter. Stir in 1 1/2 cups baking mix. Press in ungreased rectangular pan, 13 x 9 x 2 inches. Bake 12 minutes.

Beat eggs in medium bowl with fork; mix in granulated sugar and almond extract. Stir in coconut, almonds and 3 tablespoons baking mix; spread over baked layer. Arrange cherries on top. Bake until light golden brown and set (22 to 25 minutes). Cool. Cut into bars. Yields about 36 bars, 2 x 1 1/2 inches.
