3/4 c. finely cut dates 1/2 c. cold water 1/4 c. sugar Cook until it seems firm, or hard and smooth. Take off stove. Add 1/2 cup pecans. DOUGH: 1/2 c. butter 1/2 c. sugar 1/2 c. brown sugar Add 1 beaten egg. Mix well. Add 2 cups sifted flour with 1/2 teaspoon baking soda, 1/4 teaspoon salt. Roll out 1/4 inch thick. Spread with cooled date mixture. Roll up like jelly roll. Wrap the roll of cookies in wax paper and chill overnight. Next day slice cookies to 1/4 inch thickness. Bake on a greased cookie sheet at 350 degrees 8 to 10 minutes. |
