SPINACH PIE 
1 (9 inch) pie shell, unbaked
4 slices cut up bacon
1/8 c. minced onion
1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
2 beaten eggs
1 sm. (16 oz.) Ricotta cheese
1/2 c. Parmesan cheese
1 tsp. pepper

Preheat oven to 375 degrees. Saute onion with the bacon. When light brown, add all to spinach. Add eggs, cheeses, and pepper to spinach mixture and stir.

When blended spoon in pie shell. Bake 45 to 55 minutes. Serve hot, cold or room temperature.
