GRANDMA'S SPINACH CHEESE PIE 
1 pkg. frozen chopped spinach
1/2 c. grated Parmesan cheese
2 lb. ricotta cheese
3 eggs or egg substitute
1/8 tsp. freshly ground pepper
1/2 tsp. salt
8" pie crust

Thaw spinach and drain well. Do not cook. Mix well with rest of ingredients. Pour into pie shell and bake at 350 degrees for 30 minutes or until set in center. Serve hot or cold.
