SPINACH CHEESE PIE 
1 pkg. frozen chopped spinach
1/2 c. Romano cheese
2 lb. Ricotta cheese
3 eggs
1/8 tsp. freshly ground pepper
1/2 tsp. salt
1 8-inch pie crust shell

Thaw spinach, drain thoroughly but do not cook. Combine all ingredients (diced ham, prosciutto or pepperoni may be added to the mixture), mix well. Turn mixture into pie crust shell and bake in preheated 350 degree oven for 30-40 minutes or until set in the center.
