SPINACH - CHEESE PIE 
1 pkg. frozen chopped spinach
1/2 c. grated Parmesan or Romano cheese
2 lb. container Ricotta cheese
3 eggs
1/8 tsp. pepper
1/2 tsp. salt
9 inch pie crust

Thaw spinach, drain thoroughly, do not cook. Combine spinach with rest of ingredients and mix well. Turn mixture into pie shell and bake in preheated 350 degree oven for about 30 minutes or until set in center. Serve hot or cold.

Diced ham, crumbled cooked sausage, or prosciutto may be added to spinach mixture. 4 to 6 servings.
