SPINACH PIE 
1 pie crust, unbaked
1 (10 oz.) pkg. frozen, chopped spinach, thawed (with moisture squeezed out)
2 eggs
1 med. onion, chopped
16 oz. Ricotta cheese
1/4 c. Parmesan cheese
1 tbsp. butter
Salt & pepper

Warm pie crust in 375 degree oven for 5 minutes. Saute onion in butter, add spinach and heat through. In medium bowl mix Ricotta, Parmesan, eggs, salt and pepper. Add to spinach. Pour into pie crust and bake 45 minutes at 375 degrees.
