SPINACH PIE | |
9 inch unbaked pie shell or homemade pie crust 1 tbsp. butter 1 c. minced onion 1 (10 oz.) pkg. chopped, frozen spinach, thawed 1 (15 oz.) container skim or whole Ricotta cheese 2 eggs 3/4 tsp. salt 1/8 tsp. pepper 1/8 tsp. nutmeg 1/4 c. grated Parmesan cheese Heat oven to 400 degrees. Prick pie shell with a fork and bake 15 minutes until lightly browned. In a large skillet, melt butter. Add onion. Cook until soft, stirring occasionally. Squeeze spinach in hands or colander to remove as much moisture as possible. Add spinach to onion and toss over heat until all liquid has evaporated; remove skillet from heat. Mix remaining ingredients in a large bowl. Add spinach-onion mixture and mix until it looks like green and white marble. Pour filling into pie shell. Turn down oven to 350 degrees. Bake 40-45 minutes until top is golden brown and filling is set. Enjoy! |
