PLANTAIN TOSTONES - TOSTONES DE
PLA'TANO
 
A = 3 green plantains
B = vegetable oil (for deep frying)

1. Peel plantains and cut into diagonal slices 1 inch thick.

2. Deep fry in oil, heated to 350 degrees, about 7 minutes.

3. Remove from pan and place on absorbent paper.

4. Fold the paper over slices and pound with palm of the hand.

5. Deep fry in oil heated to 375 degrees until crisp and golden. Remove and drain on absorbent paper. Sprinkle lightly with salt. Makes 15 to 18.
