PLANTAIN WITH GARLIC SAUCE 
2 lg. ripe (very) plantains
3-4 garlic cloves, finely minced
1/2 c. salad oil
2-3 tbsp. vinegar (white)
1/2 tsp. salt
1/4 c. oil for frying

Peel and slice plantain about 1/4" thick. Heat oil. Brown plantain, turning once. Remove from pan. Set on platter (keep warm). Now mix together garlic, vinegar and salt, pour the salad oil to mixture; stir well. Pour over plantain. Also good with green plantain.
