BREAST OF CHICKEN FIESTA 
1 c. Cheddar cheese cracker crumbs
2 tbsp. taco seasoning mix
8 chicken breast halves, skinned and boned
4 green onions, chopped
2 tbsp. butter
2 c. evaporated milk
1 c. Monterey Jack cheese, shredded
1 c. Cheddar cheese, shredded
1 (4 oz.) can green chilies, chopped
1/2 tsp. chicken bouillon granules

Combine cracker crumbs and seasoning mix, stirring well. Dredge chicken in crumb mixture and place in a greased 13 x 9 x 2 inch baking dish. Saute green onions in butter in a skillet until tender. Stir in milk and remaining ingredients; pour over chicken. Bake, uncovered, at 350 degrees for 45 minutes. Yield: 8 servings.
