RED VELVET CAKE 
1/2 c. Crisco or 1 1/2 c. Wesson oil
1 1/2 c. sugar
2 eggs
2 oz. or 4 tbsp. red food coloring
2 1/2 c. flour
1/2 tsp. salt
1 tbsp. cocoa
1 c. buttermilk
1 tsp. vanilla
1 tsp. baking soda
1 tbsp. white vinegar

Cream Wesson oil and sugar. Add eggs. Mix food coloring with vanilla and cocoa. Blend into creamed mixture. Add flour and buttermilk alternately. Mix soda and salt and vinegar. Add to mixture and beat. Pour into 3 (8 x 8 inch) pans or 2 (9 x 9 inch) pans. Bake at 350 degrees until done (25 minutes).

ICING:

1 stick butter
1 (8 oz.) pkg. cream cheese
1 lb. (4 c.) powdered sugar

Beat all together until creamy. Add 1 cup chopped nuts, if desired.
