RED VELVET CAKE 
2 1/2 c. all purpose flour
1 1/2 c. sugar
2 tsp. cocoa
1 tsp. baking soda
1 tsp. salt
2 eggs
1 1/2 c. Wesson oil
1 c. buttermilk
1/3 c. red food coloring
1 tsp. vinegar
1 tsp. vanilla

Place dry ingredients in bowl. Blend eggs with a fork in a separate bowl. Combine oil and eggs. Blend well. Add mixture to dry ingredients and mix until smooth. Add buttermilk and then add food coloring. Bake at 350 degrees for 30 minutes in an 8 inch layer cake pan.

FROSTING:

8 oz. cream cheese, room temperature
1 box powdered sugar
1 stick soft butter
1 tsp. vanilla
Chopped walnuts, other nuts may be substituted

Mix ingredients until smooth. Spread evenly over cake. Top with nuts.
