RED VELVET CAKE 
2 eggs
1 1/2 c. sugar
2 1/2 c. plain flour
1 c. buttermilk
1 tsp. vanilla
1 1/2 c. Wesson oil
1 tsp. baking soda
1 tsp. vinegar
1 bottle red food coloring

Combine all ingredients. Bake 30 minutes at 300 degrees.

ICING:

1 box confectioners' sugar
10 oz. cream cheese
1 stick butter
1 c. pecans

Combine and spread on cooled cake.
