CREAM DE MENTHE CAKE 
1 pkg. white cake mix
2 egg whites
1 c. plus 3 tbsp. water
1/4 c. cream de menthe
1 (16 oz.) chocolate fudge frosting
1 (8 oz.) Cool Whip

Combine cake mix, egg whites, water and 2 tablespoons cream de menthe. Beat 2 minutes on high speed. Pour batter into 9 x 13 inch pan. Bake at 350 degrees for 25-30 minutes. Let cool. Ice with fudge frosting. Combine Cool Whip and 2 tablespoons cream de menthe for 2nd layer, garnish with maraschino cherries.
