HASH BROWNED POTATOES 
2 c. diced, cooked potatoes
2 tbsp. finely chopped onion
4 tbsp. all-purpose flour
1 1/2 tsp. salt
Pepper
2 tbsp. milk
2 to 3 tbsp. melted shortening

Combine onions and potatoes. Mix flour, salt, and pepper and slowly blend in the milk. Combine with potato-onion mixture. Heat shortening in a heavy skillet. Add potatoes and cook over medium heat until the underside is brown. Turn to brown the other side.
