SAUERKRAUT STUFFING FOR GOOSE 
1 c. chopped onion
1/4 c. fat
2 lbs. sauerkraut, drained
1 c. raw shredded potato
1/2 tsp. caraway seed
1/4 tsp. pepper
1/2 c. white wine

Cook onion in fat until tender. Combine cooked onion with rest of ingredients and mix well. Makes enough dressing for 8 to 10 pound goose.
