SPANISH RICE 
6 slices bacon
1/4 c. finely chopped onion
1/4 c. chopped green pepper
2 c. canned tomatoes
3 c. cooked rice (1 c. uncooked)
1 tsp. salt
1/8 tsp. pepper

Fry bacon until crisp - remove from skillet or set aside. Fry onion and green pepper in same skillet until onion and pepper are soft. Pour off bacon grease and add remaining ingredients and crumbled bacon.

Bake in greased casserole in 350 degree oven for about 30 minutes. American or Cheddar cheese may be sprinkled over the top if desired. Serves 8.
