FETTUCCINE WITH CHICKEN AND
SPINACH
 
1 stick (1/2 c.) butter
1 onion, sliced
2 tbsp. fresh basil or (1 1/2 tsp. dried)
2 garlic cloves, minced
1/4 tsp. dried red pepper flakes
1 lb. boneless chicken breast halves skinned and cut in strips
2 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
8 oz. fettuccine (cooked)
2 c. Parmesan cheese
1 1/2 tbsp. orange juice

Melt butter in heavy large skillet over medium heat. Cook onion, basil, garlic and red pepper flakes approximately 5 minutes. Add chicken strips and cook through. Stir frequently.

Mix in spinach. Season with salt and pepper. Add mixture to large bowl with pasta. Add cheese. Toss thoroughly. Drizzle with juice.
