FRESH SPINACH FETTUCCINE 
1 lb. fresh spinach
1 c. fresh parsley sprigs
1/2 c. olive oil
1 c. grated Parmesan cheese
1/2 c. walnuts pieces
2 cloves garlic
1/2 tsp. salt
1/4 tsp. pepper
1 (12 oz.) pkg. fettuccine
Additional grated Parmesan cheese (optional)

Remove stems from spinach; wash leaves thoroughly, and pat dry.

Position knife blade in food processor bowl. Gradually add spinach; process until evenly chopped. Add parsley to spinach, and process until evenly chopped. Add olive oil to the spinach-parsley mixture, and process well. Add next 5 ingredients, and process until mixture is smooth.

Cook fettuccine according to package directions; drain well. Combine fettuccine and spinach mixture; toss gently. Place mixture in a serving dish. Sprinkle with additional Parmesan cheese, if desired. Yield: 8 to 10 servings.
