HAPPY DAY CAKE 
2 1/2 c. sifted cake flour
2 eggs
1 1/2 c. sugar
3 tsp. baking powder
1 tsp. salt (1/2 tsp. salt if cooking with butter)
1/2 c. shortening
1 c. milk
1 tsp. vanilla

Sift all the dry ingredients together into a large bowl. Add shortening, eggs and milk, alternately (I add 1/2 cup of milk and mix well and then add the balance of the milk alternately as I beat the mixture).

Bake in two 9 inch layer cake pans in a 325 degree oven for 25 minutes or until done. This cake is very good with 7 minute frosting. Sprinkle fresh grated coconut between layers, on top and sides of frosted cake.
