ROSA'S CASSEROLE 
1 lb. Italian sausage (sweet or hot)
1 1/2 lbs. ground beef
1 med. onion, chopped
1 piece garlic, optional
1 #2 1/2 can of tomatoes
1 can tomato sauce (8 oz.)
1 can tomato paste
1 1/2 tbsp. water
2 tsp. chili powder (Shillings)
1 1/2 whole leaf oregano
1/2 tsp. basil leaf
1/4 tsp. rosemary
1/4 tsp. thyme
1/2 pt. cottage cheese
Jack cheese
1/4 tsp. anise seed
1 bay leaf
1 tsp. parsley flakes
Lawry salt to taste
Pepper to taste

Brown sausage in bacon fat or oil in a skillet. Remove from pan. Brown chopped onion in oil. Add a little water until evaporated and onion looks creamy brown.

Add ground beef and brown lightly. Add tomatoes and sauces with spices and mushrooms. Return sausage to skillet and cook all ingredients for 1 hour on low heat stirring frequently.

Cook either macaroni, spaghetti or lasagna in salted water until done. Drain. In a baking dish place noodles, cottage cheese, and sauces in layers. Sprinkle with Parmesan cheese. Lastly add more sauce and top with Jack cheese. Bake until done at 350 degrees.
