“EARTHQUAKE CAKE” IS IN:

EARTHQUAKE CAKE 
The cake will crack in the middle. That's why it is called Earthquake cake!

1 cup chopped pecans
1 cup coconut flakes
1 box German chocolate cake mix (I use Betty Crocker)
1/2 cup (1 stick) butter
1 (8 oz.) pkg. cream cheese (I use Philadelphia)
1 (1 lb.) box confectioners' sugar

Preheat oven to 350°F.

Spread chopped pecans on the bottom of a buttered 9x13-inch cake pan. On top of nuts put coconut flakes, then pour the following batter over the nuts and coconut mixture without stirring.

Mix German chocolate cake mix according to package directions.

Pour the batter gently over the coconut and set aside.

In a saucepan, melt butter and cream cheese. Stir in confectioners' sugar. Pay very close attention to the mixture in the pan as it will scorch easily. For this reason, it's best to use a heavy bottom pan.

Pour the cream cheese, sugar and butter mixture over the top of the cake batter (without stirring!)

Bake at 350°F for 45 minutes.

I used chopped walnuts instead of pecans and Devils Food cake mix. I usually determine mine is done when the cream cheese starts browning. Just fixed one this past week for guest and fix it for family gatherings.

I have to agree with everyone's favorable comments. I normally chopped up my favorite candy bar (snickers) and put on top the coconut. It is loved by all my coworkers!

Cathy, It doesn't need frosting because of the cream cheese filling. It would be too much. I agree about the chocolate chips.

Hello!! Everyone loves this recipe. I substitute coffee for the liquid in the cake and add 2 cups of chocolate chips on top. I have also done a white chocolate version with an almond cake, white chocolate chips and macadamia nuts and no coconuts. Happy cooking. This one of my favorite websites. Midwest farm girl.
