EGG AND CHEESE STRATA 
10 slices white bread
1 c. shredded American cheese
12 eggs
4 c. milk
2 c. shredded Cheddar cheese (I prefer sharp)
1 tsp. salt (or less)
2 tsp. dry mustard
1/4 tsp. paprika
White pepper, if desired
1 tbsp. dried minced onion (optional)

Discard bread crusts. Cut a circle from each slice and save circles. Scatter trims in 9 x 13 inch greased pan. Blend slightly beaten eggs, milk and seasonings. Pour over bread, add circles of bread and cheese. Refrigerate at least 1 hour or overnight. Bake in 350 degree oven for about 35 to 45 minutes. This is nice for brunch. You may add 1 cup or more diced ham to the bread and cheese.
