PUMPKIN BREAD 
4 eggs
3 c. sugar
1 c. cold water
1 c. salad oil
2 c. (1 can) pumpkin
3 1/2 c. flour
3 tsp. pumpkin pie spice
1/2 tsp. baking powder
2 tsp. baking soda
1 1/2 tsp. salt
1 c. chopped nuts
1 c. raisins, plumped

In a large bowl, beat eggs. Add sugar, cold water, oil and pumpkin. Mix well and set aside. In a separate bowl, sift flour. Add remaining ingredients and mix well. Add dry mixture to wet mixture, mixing thoroughly. Divide batter among three greased and floured loaf pans and bake at 350°F for one hour.

Note: To plump raisins, pour boiling water over raisins and let stand for 15 minutes. Drain raisins and sprinkle lightly with flour.
