CRISPY HERB CHICKEN 
2 c. mashed potato flakes
2/3 c. grated Parmesan cheese
2 tbsp. parsley flakes
1 tsp. onion powder or 2 tsp. minced dry onions
1/2 tsp. garlic powder
1/4 tsp. paprika
Approx. 1/2 c. butter, melted
2 to 3 lb. chicken, in parts, skinned, patted dry

Heat oven to 375 degrees. Grease 15 x 10 inch jelly roll pan or 13 x 9 inch pan. Combine all ingredients EXCEPT butter, and mix with fork until well blended. Dip pieces in melted butter, roll in potato flakes mixture to coat and place in pan. Bake at 375 degrees for 60 to 75 minutes until chicken is tender. Extra coating mixture may be stored in freezer in ziplock bag.
