SAFFRON RICE RING 
1/2 c. chopped scallions or green onions
1/3 c. chopped onion
2 tbsp. butter
1/8 tsp. saffron
1 c. rice
2 c. chicken broth
Salt and pepper

Saute scallions and onions in butter. Add saffron; saute for 1 minute. Add rice; mix well. Stir in chicken broth; bring to a boil. Cover. Bake in 375 degree oven for 30 minutes. Remove from oven; season with salt and pepper. For each serving, shape 1 cup of rice mixture into ring. Yield: 3 servings.
