RICE RING JELLO WITH STRAWBERRY
SAUCE
 
1/2 c. rice (not instant rice)
3 c. milk
1/2 tsp. salt
1 pkg. Knox gelatin
3 tbsp. cold water
1 c. whipping cream, whipped
1/2 c. sugar
2 pkg. frozen strawberries
1 c. strawberry juice
2 tbsp. lemon juice
2 tbsp. cornstarch
1/2 c. sugar

RICE RING: Cook rice in milk and salt on low heat; soak gelatin in cold water (only after rice is done). Add gelatin to cooked rice, cool. Whip cream, add 1/2 cup sugar to whipped cream. Add whipped cream to rice mix. Chill rice mix in Jello mold and set.

SAUCE: Thaw strawberries, save 1 cup juice. Mix cornstarch, sugar. Add to juice in saucepan. Cook until thick. Add lemon juice. Chill and pour over rice ring when set.
