| CHEESE RING WITH STRAWBERRY JAM | |

1 lb. grated sharp Cheddar cheese 1 c. finely chopped pecans 1 c. mayonnaise 1 small onion, finely chopped dash of black pepper dash of cayenne pepper Combine and place in a 5 or 6-cup greased ring mold. Refrigerate several hours or overnight. Unmold and fill center with strawberry preserves. | |

I had this the first time at a Christmas party about 15 years ago. I started making it every Christmas for our family Christmas dinner. Every person there, even those who don't care for cheese ate cracker after cracker loaded with the cheeseball and the strawberry preserves. Then every year they have asked me if we were having it again. It is so different and delicious!!
