POOR MAN'S BROWN FLOUR POTATO
SOUP
 
4 lg. potatoes, pared and diced (4 c.)
3/4 c. finely chopped onion
1 1/2 tsp. salt
Water
1 tbsp. butter
1/4 c. flour
4 c. (1 qt.) milk
1 hard-cooked egg, chopped
1/8 tsp. pepper

Put potatoes, onion, salt in large saucepan; add water to cover. Bring to boiling; boil gently about 25 minutes or until potatoes are tender. Melt butter in heavy skillet. Add flour; stir constantly until flour is dark brown. Stir in just enough milk to make a smooth paste. Add remaining milk and potatoes; heat to simmering. Add brown flour mixture; mix well. Heat about 5 minutes longer. Add egg and pepper. Makes 6 servings.

Haven't made it yet, but it looks like my mom's soup with the same name and same ingredient except for the egg. Popular during WWII
