SWISS STEAK 
1/2 - 3/4 lb. beef round steak
2 tbsp. all purpose flour
1/2 tsp. salt
2 tbsp. shortening
1 c. (8 oz. can) stewed tomatoes
1/4 c. chopped celery
1/4 c. chopped carrot
1 tbsp. chopped onion
1/4 tsp. Worcestershire sauce
2 tbsp. shredded sharp American cheese

Cut meat into 2 portions. Mix flour and salt, pound into meat. Set aside remaining flour. Brown meat in small shallow baking dish. Blend remaining flour with drippings in skillet. Add remaining ingredients, except cheese; cook, stirring constantly, until mixture boils. Pour over meat. Cover and bake at 350 degrees until meat and vegetables are tender; about 2 hours. Sprinkle cheese over meat. Return to oven for a few minutes to melt cheese. Serves 2.
