FRESH COCONUT CAKE 
2 3/4 c. cake flour
4 tsp. baking powder
3/4 tsp. salt
3/4 c. butter
1 1/2 c. sugar
4 egg whites
1 tsp. vanilla
1 c. coconut milk

Sift flour, baking powder and salt. Cream butter and sugar. Add flour mixture alternately with coconut milk, until smooth. Add vanilla. Beat egg whites until frothy. Beat in 1/2 cup sugar until stiff peaks form. Fold egg whites into batter. Grease and flour 2 cake pans. Pour in batter. Bake at 350 degrees for 30 minutes.
