FRESH COCONUT CAKE | |
2 c. sugar 2 c. self rising flour 1 stick butter 1 c. water 1/2 c. oil 1/2 c. buttermilk 2 eggs 1 tsp. coconut extract Mix sugar and flour. Set aside. Bring water, butter and oil. Pour over flour and sugar mixture. Mix well. Add buttermilk, eggs, coconut extract. Mix well. Bake at 350 degrees for 30 minutes. Makes 3 layers or oblong. ICING: 2 pkg. fresh frozen coconut 1 c. sugar 1 c. water 1 can of vanilla frosting Heat fresh coconut, sugar and water. Boil 2 minutes. Spread this over hot cake first then spread on icing. |
