FRESH COCONUT CAKE - FROSTING 
1 lg. egg white
1 c. sugar
3 lg. size marshmallows, cut up
2 tbsp. white Karo syrup
1/4 tsp. cream of tartar
1/4 tsp. salt
Remainder of coconut

Mix egg white, sugar, marshmallows, Karo, cream of tartar and salt in top of double boiler. Place over boiling water. Add 1/3 cup boiling water to egg mixture and beat with mixer at high speed, beating until stiff, about 7 to 10 minutes. Frost top and sides of cake. Mix a small amount of sugar with the remainder of coconut and sprinkle all over cake for finishing touch. This recipe is long, but not as long as the blue ribbon it deserves!
