OATMEAL CAKE WITH COCONUT
FROSTING
 
1 1/2 c. boiling water
1 c. quick oatmeal
1 stick butter
2 eggs
1 c. brown sugar
1 c. white sugar
1 1/3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt

FROSTING:

1 c. sugar
3 egg yolks, beaten
1/4 lb. butter
1 tsp. vanilla
1 c. evaporated milk

CAKE: Pour boiling water over oatmeal and butter, cover for 20 minutes. Add sugars and beat. Sift dry ingredients and add. Pour into 13 x 9 inch baking dish (greased and floured). Bake at 350 degrees for 35 minutes. FROSTING: Cook above ingredients for 12 minutes on low heat (slow boil), stirring constantly after it starts to boil. Then add 1 1/3 cup coconut and 1 cup pecans. Frost cooled cake.
