BAMA'S FRESH COCONUT CAKE 
CAKE:

2/3 c. shortening
1 1/2 c. sugar
2 3/4 c. self rising flour
1 c. milk
4 egg whites
1 tsp. vanilla

DIVINITY ICING:

2 c. sugar
3/4 c. water
Pinch salt
4 egg whites
1/4 tsp. cream of tartar
6-8 marshmallows, not melted
1 tsp. vanilla

CAKE: Cream shortening and sugar together; add flour alternately with milk. Beat well. Add egg whites, one at a time, beating well after each. Stir in vanilla. Spread in 4 greased and floured pans. Bake at 350 degrees for 15 to 20 minutes.

ICING: Cook sugar, water and salt until forms a thread. While this is cooking, beat 4 egg whites with cream of tartar. Pour mixture over egg whites, beating at same time. Add marshmallows (they will melt into mixture). Beat until stiff. Add vanilla.

Cook's Note: Marshmallows give icing great texture. Icing also good on pineapple and banana cakes.
