BEEF STROGANOFF 
2 lbs. sirloin
1/3 c. butter
3 med. onions, chopped
12 lbs. mushrooms, sliced
Flour
2/3 c. tomato juice
1/2 c. sherry
1 1/2 c. water
2/3 c. sour cream
Salt and pepper

Cut meat in thin strips; dredge with flour. Brown quickly in skillet in 1/2 the butter. Remove meat and add remaining butter. Add onion and mushrooms and cook for 5 minutes. Add meat, salt, and pepper. Add tomato juice, sherry, and water. Bring to a boil; cover and simmer for 1 hour or until meat is tender. Season with salt and pepper. Stir in sour cream and serve immediately. Good over rice or noodles.
