FINGER LICKING SWEET POTATO PIE 
1 c. mashed potatoes
2 c. sugar
3 eggs
1 stick butter, melted
1 sm. can evaporated milk or 2/3 c.
1 tsp. lemon or vanilla extract
1 unbaked pie shell

Blend potatoes and sugar. Add eggs, one at a time, beat after each egg. Add butter, milk and lemon. Pour into pie shell. Bake at 350 degrees for 40 to 45 minutes.

Double potatoes only for 2 pies.
