APRICOT BARS 
3/4 c. butter
1 c. sugar
1 egg
2 c. self-rising flour
1 1/3 c. coconut
1/2 c. chopped walnuts
1/2 tsp. vanilla
1 (12 oz.) jar apricot preserves

In a large bowl cream butter and sugar. Mix in egg. Gradually beat in flour. Mix in coconut, walnuts and vanilla. Press 2/3 of dough into a greased 13 x 9 x 2 inch pan. Spread with preserves, crumble remaining dough over top. Bake at 350 degrees for 30 minutes.
