SHRIMP AND RICE SALAD 
1 c. shrimp
3 c. rice, cooked
1/4 c. celery
1/4 c. pimento olives
1/4 c. green peppers
1/4 c. pimentos
1/4 c. onion
1/2 tsp. salt
1/4 tsp. pepper
3 tbsp. mayonnaise
Greens
Tomatoes
1/2 c. French dressing
1 lemon

In a large bowl, combine shrimp, rice, celery, olives, green peppers, pimento and onion. Cover and chill.

Just before serving, stir together salt, pepper, and mayonnaise and toss with shrimp mixture. Spoon shrimp into crisp greens, garnish with tomato wedges and, if desired, with whole shrimp. Serve with French dressing and lemon wedges.
