RICE AND SHRIMP SALAD 
2 pkgs. UNCLE BEN'S® long grain & wild rice (cool)
6 oz. or more frozen boiled shrimp
2 bell peppers, chopped
2 c. chopped celery
1 c. frozen peas (don't cook, just thaw)
1 sm. jar pimiento, diced (opt.)
1 c. mayonnaise
1 c. sour cream
2 tbsp. curry powder (or to taste)

Prepare at least 2 hours before serving. Cook rice and cool. Add all ingredients and mix well. Refrigerate.
