CREAM OF BROCCOLI SOUP 
1 lg. bunch broccoli
1/4 c. butter
2/3 c. chopped onion
2 tbsp. flour
2 c. chicken broth
2 c. lite cream
1/2 tsp. Worcestershire sauce
3/4 tsp. salt
1 c. grated cheddar cheese

Cook broccoli until tender. Drain, reserving liquid. Melt butter, add onion and cook until onions are transparent. Bend in flour; add broth slowly and cook stirring constantly until boiling. Stir in 1 cup liquid drained from broccoli, cream, Worcestershire sauce, and salt. Add broccoli; heat until boiling. Stir in cheese. For a change, omit broccoli and add diced potatoes for cream of potato soup.
