BREAD OR ROLL DOUGH 
3 pkg. yeast
1/2 c. shortening
1/2 c. sugar
1 c. mashed potatoes (instant work fine)
2 eggs, beaten
1 tsp. salt
5-7 c. flour

Dissolve yeast in 1 cup warm water, let stand 2-3 minutes. Add shortening, sugar, potatoes, eggs and salt; stir to blend. Add flour. Mix until dough is soft and elastic. Put into greased pan, cover and refrigerate overnight.

When ready to use, let dough stand at room temperature about 1 hour. Shape into rolls or bread, let raise. Bake at 350 degrees until done. Rolls 15-20 minutes. Bread 25-30 minutes. Dough is great for cinnamon or pepperoni rolls too.
