GREEN RICE CASSEROLE 
1 (10 oz.) pkg. chopped spinach, frozen
3 eggs
1 (13 oz.) can evaporated milk
2/3 c. Minute rice
Pasteurized process cheese spread (8 oz. pkg.), cut in cubes
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. chopped onion

Microwave spinach in a 1 quart casserole at High (10) 5 to 6 minutes. Drain well and set aside. Mix eggs, milk, rice, cheese, salt and pepper in 2 quart casserole. Microwave at high (10) 5 to 6 minutes, stirring after 2 minutes until cheese melts.

Add onion and spinach to rice mixture and pour into a 10 x 6 x 2 inch baking dish. Microwave at High (10) 10 to 12 minutes until center is set. Makes 6 to 8 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
