ENCHILADA CASSEROLE 
2 lb. hamburger
1 onion
1 can cream of mushroom soup
1 can cream of chicken soup
1 lg. can of enchilada sauce
1 can whole Ortega chilis, chopped
1 lb. Jack cheese, grated
1 lb. cheddar cheese, grated
12 tortillas, cut up
1 can chopped olives

Brown meat and onions; drain; add all of the soups and chilies and enchilada sauce and tortillas. Heat about 3 to 5 minutes. Add 3/4 of cheese and olives. Heat until cheese melts. Put in baking dish. Bake about 30 minutes at 350 degrees, then add rest of cheese on top and serve.
