VEGETABLE-BEAN SALAD WITH RICE
OR PASTA
 
1 c. raw rice

Cook without butter or 3 cups cooked orzo. 1 lg. stalk broccoli, steamed 5 min., blanched 2 min. 1/2 lb. snow peas 1/2 lb. mushrooms, sliced thin 1 green or red pepper, thinly sliced 4-6 scallions, sliced thin

Combine all salad ingredients in large bowl.

DRESSING:

1/4 c. olive oil
2 tbsp. lemon juice
3 tbsp. vinegar
2 lg. cloves garlic, crushed
1 tsp. dry mustard
1/2 tsp. tarragon, crumbled
1/2 tsp. salt and pepper or to taste

Combine all ingredients and mix well. Pour over salad and toss to mix thoroughly. Refrigerate until serving time, 2-24 hours. Serve on bed of greens and garnish with cherry tomatoes. Serves 4 main dish (complete protein).
