VEGETABLE RICE SALAD 
1 c. light mayonnaise
1 tbsp. vinegar
1 sm. clove garlic, minced
1 tsp. salt
1/4 tsp. pepper
2 c. cooked rice
1 (10 oz.) pkg. frozen peas, thawed
1/4 c. chopped green onions
1/2 c. shredded carrot

In medium bowl stir first 5 ingredients until smooth. Add remaining ingredients; toss to coat well. Cover; chill. Makes about 3 1/2 cups.
